A week with naturalist and chef Josh Crumpton following food — including bison, beef, trout, game birds, and elk — from the land to the table.

The Program

Each day centers on one food and where it comes from. You'll ride into the cattle operation to see how rotational grazing works on the ground, fish for trout, watch pointers and flushers work chukar in the canyon, and spend a day on horseback looking for the ranch's elk herd. Swarovski Optik staff will join us for instruction on using spotting scopes, binoculars and long-range glass. We'll spend the afternoons in the kitchen cooking together, learning about wild game preparation, then share a meal around the camp table.

About Josh Crumpton

Josh Crumpton is the steward of Spoke Hollow Ranch, where he articulates the deep connections between habitat stewardship, sporting heritage, and culinary tradition. A former restaurateur and wine distributor who has "gone feral" to return to the wild, Josh brings decades of gourmet culinary expertise to the field. Through his conservation leadership with organizations like Trout Unlimited and American Rivers, he translates complex ecological relationships into accessible wisdom. He is the host of the Field Standard Podcast and the creator of the forthcoming television series Undercurrents.

Accommodations

The accommodations at the Paintrock Canyon Ranch are designed to put you as close to nature as possible, but with all the comforts of home. Large, private safari-style tents are stylishly furnished with full-sized beds, bedside tables, dressers and chairs. Tents are located next to the Paintrock Creek at the entrance to the spectacular Paintrock Canyon.

Meals

All meals will be creatively prepared by a private chef, featuring Ranchlands beef and local produce and dairy whenever possible. Meals at the ranch will be seated, but casual and friendly and accompanied by wine and beer. We are happy to accommodate all dietary preferences with advance notice.

Sample Itinerary

Sunday · Bison

Guests arrive through the afternoon and settle into their tents. Before dinner, we head out with Swarovski binoculars for a first look at the ridges and draws around camp. Dinner is bison, a nod to the animal that fed people on this continent long before cattle, with conversation about nomadic cultures and how the great herds of ungulates once moved.

Monday · Beef

A morning ride on the ranch horses takes us into the cattle operation, where the ranch team talks through rotational grazing and what it does for the land. That afternoon, we cook Ranchlands beef.

Tuesday · Trout

The morning is spent on the water with fly rods, while the afternoon is spent with spotting scopes and instructions in journaling. That evening, trout is served for dinner.

Wednesday · Game Birds

The morning is spent on the clay range, and the afternoon shooting rifles with Swarovski Optik staff and their long-range optics. Later, Josh will work his dogs and show how pointers and flushers find a covey of chukar. We finish back in the kitchen, cooking birds together.

Thursday · Elk

A full morning on horseback, with spotting scopes along, looking for the ranch's elk herd. In the late afternoon, we cook elk for the biggest dinner of the week, with talk of how herds move today and what it means to hunt them well.

Friday · Departure

Breakfast together before goodbyes.

Getting Here

The ranch, located near Hyattville, is 1 1/2 hours from Cody, Wyoming, and 3 hours from Billings, Montana. Both cities have airports with multiple daily flights from major airports. Roundtrip shuttles from the Cody airport to the ranch can be booked via Explore Cody Transportation.

Paintrock Canyon Ranch

The Paintrock Canyon Ranch sprawls across northern Wyoming and is made up of rolling meadows and streams carving through high alpine valleys. The ranch’s landscape is characterized by the Paintrock Canyon, which starts at the ranch headquarters and meanders for 8 miles, opening into the Paintrock Basin at the foot of Cloud Peak, the highest peak in the Bighorn range. The Canyon itself is shaped by steep limestone slopes that climb thousands of feet high above the trail. Red sandstone cliffs, whose color transforms from deep orange to burgundy red with the changing light, rise above the meadows surrounding the ranch’s headquarters.

What's Included

Our rates include all activities, meals, and accommodations. Transportation to and from the ranch, taxes, fees, and gratuity are not included.
